- 3 slices bacon, fried crisp, grease reserved
- 1 egg
- 1 TBS tarragon vinegar
- 1 TBS red wine vinegar
- 1 TBS sugar
- Olive oil
- Salt and pepper to taste
- In small bowl whisk egg, vinegars, and sugar until sugar is dissolved
- Pour ingredients into warm (not hot) bacon grease
- Cook until slightly thickened
- Add olive oil until it reaches desire consistency
- Add salt and pepper to taste
You may thin with a little warm water if necessary
