Delicious with the warm dressing

  • 2 10-ounce packages fresh spinach
  • 10 strips bacon
  • 1/2 tsp rosemary
  • 1/2 tsp tarrabon
  • 1/2 tsp oregano
  • 4 TBS olive oil
  • 6 TBS red wine vinegar
  • 2 tsp Worcestershire sauce
  • 2 tsp Dijon mustard
  • 4 tsp sugar
  • 1/4 tsp fresh ground black pepper
  • 1/4 tsp salt
  1. Remove stems from spinach, wash, dry and set aside
  2. Cut bacon into 1\” pieces and fry in skillet until crisp; drain on paper towels, and remove excess grease from skillet
  3. Add rosemary, tarragon, and oregano to skillet
  4. Add oil, vinegar, Worcestershire sauce, mustard, and sugar; mix well
  5. Allow dressing to simmer for 3 minutes
  6. Add pepper and salt; remove from heat
  7. Transfer spinach to large bowl; pour hot dressing over greens
  8. Cover bowl and shake to distribute dressing evenly over spinach
  9. Leaving covered for 15 seconds, allow spinach to steam
  10. Crumble bacon over salad and toss
  11. Serve immediately
