Really tasty take on chicken salad.  Excellent served as a light lunch entree'.


  • 1 whole roasted chicken from deli
  • 1 cup mayonnaise
  • ¼ cup heavy cream or half-n-half
  • 2 tsp grated white or sweet onion
  • 1 TBS sweet pickle relish
  • ½ tsp curry powder
  • ½ cup finely diced celery
  • 1 cup diced apple
  • ½ cup seedless grapes, cut in halves
  • 1/3 cup toasted, slivered almonds
  • Green leaf lettuce leaves or whole tomatoes, topped and scooped out


  1. De-bone roasted chicken and chop meat into bite-sized pieces
  2. In bowl blend mayonnaise, cream, onion, relish, and curry
  3. Combine mayonnaise mixture with chicken, apple, grapes, and almonds; mix well
  4. Place chilled or room temperature chicken salad on lettuce leaves or into tomato cups

Serves 4

Chicken salad may also be heated and served on hot, buttered toast
