Truly a unique salad experience!

  • 1 head red leaf lettuce
  • 1 bunch watercress
  • 1 10-ounce bag baby spinach leaves
  • 1 cup lump crabmeat
  • 1 cup small cooked shrimp, peeled
  • 1 cup cooked crawfish tails
  • ½ pound cooked smoke sausage sliced
  • 2 small Creole tomatoes, diced
  • 1 cup sliced pickled okra
  • ¼ cup minced white or Vidalia onion
  • ¼ cup minced celery
  • 1/8 cup minced red bell pepper
  • 1/8 cup minced yellow bell pepper
  • 1 TBS pressed garlic
  • 1 cup mayonnaise
  • 1 cup sour cream
  • ½ cup ketchup
  • 2 TBS Creole mustard
  • ½ tsp salt
  • ½ tsp coarse ground black pepper
  • 1 tsp Louisiana Hot Sauce
  • ¼ cup olive oil
  1. Wash greens, remove stems and tear into 1” pieces; place into large mixing bowl
  2. Add crabmeat and next 10 ingredients, toss well but gently
  3. Into separate bowl mix mayonnaise, sour cream, ketchup and mustard; whisk until all are well blended; season with salt, pepper, and hot sauce
  4. Slowly add olive oil and whip continuously
  5. Pour over salad mixture, tossing to coat evenly
  6. Served in chilled salad bowls

Serves 6-8
