  • 2 pounds red new potatoes
  • ¼ cup olive oil
  • ¼ cup sliced green onions
  • ¼ cup chopped parsley
  • 1 cup room temperature beer
  • ¼ cup Steen’s Cane Syrup
  • 1 TBS minced garlic
  • 1 TBS Creole mustard
  • ½ tsp sugar
  • ¼ cup salad oil
  • 2 small white (Bermuda) onions, sliced
  • ¼ cup julienned green bell pepper
  • ¼ cup julienned yellow bell pepper
  • ½ tsp salt
  • ½ tsp black pepper
  • 1 tsp Louisiana Hot Sauce
  1. In a stock pot, boil potatoes until tender, 20-25 minutes; drain and cool
  2. In a skillet, heat olive oil over medium high heat; add green onions and next 4 ingredients; bring to a boil and cook for 2-3 minutes
  3. Place hot ingredients into a food processor or blender; add mustard and sugar and blend well;
  4. While blending, put in salad oil; remove and season with salt, pepper, and hot sauce
  5. Slice cooled potatoes ¼ “ thick and place in mixing bowl; add onions and bell peppers; Coat with dressing and serve warm
