* 1 TBS olive oil
* 4 ounces fresh mushroom sliced
* 1 bag mixed lettuce blend, washed, dried, and torn into bite size pieces
* 8-10 pepperoni slices, quartered
* ½ purple onion, thinly sliced into half circles
* ¼ cup shredded mozzarella cheese
* 1 small can sliced black olives
* ¼ cup crumbled feta cheese
* ¼ cup Italian salad olive mix or Kalamatra
* ¼ cup coarsely chopped hearts of palm (optional)
* Italian dressing with dash of Tabasco

1. Into a sauce pan, sauté mushroom slices in olive oil until tender, about 4 minutes; cool
2. In large salad bowl thoroughly combine mushrooms and remaining ingredients

Serves 4

Serve with toasted Italian bread or bread sticks
