Great for a Saturday afternoon tailgate party!

* 8 oz uncooked corkscrew macaroni
* ½ lb cooked ham, cut into bite-sized cubes
* 1 cup broccoli florets washed
* 1 cup frozen early, young green peas thawed
* 1 yellow squash, washed and cut into ½ circles
* 1 small red pepper, cut into thin strips
* 4 ounces of favorite cheese (goat, Swiss, co-jack, etc) cut into bite-sized pieces
* ½ cup of mayonnaise or ranch dressing
* ¼ cup Dijon or spicy brown mustard
* ¼ cup grated parmesan cheese

1. Prepare macaroni according to package instructions; drain, rinse
2. Into a large bowl, combine macaroni with next 6 ingredients
3. Combine mayonnaise (or dressing) and mustard, mixing well and add to vegetables, tossing gently.
4. Sprinkle with parmesan cheese
5. Serve at room temperature; if must be refrigerated, remove from refrigeration about 1 hour before serving as mixture will congeal when cold

Serves 6
