  • 1 pound cooked and washed crawfish tails
  • 1 bottle Drusilla House Dressing
  • 1 bottle of Drusilla Remoulade Sauce
  • 1 8-12 ounce package of rainbow rotini pasta
  • 1 tsp liquid crab boil seasoning
  • ¼ tsp Tony Chachere’s seasoning mix
  • 1 can artichoke hearts, drained, washed, tough outer leaves removed, chopped
  • 1 small can slice black olives
  • 2 plum tomatoes, washed and cut into wedges
  1. Marinate crawfish in two dressings overnight in refrigerator
  2. Next day, boil rotini in water, crab boil, and Tony’s, drain but do not rinse
  3. Into a large bowl, combine pasta and crawfish, then add artichokes, tomatoes, and olives, gently toss
  4. Served in chilled salad plates or bowls

Serves 4

Shrimp may be substituted for crawfish; makes for a great summer lunch
