A good version of the classic original Caesar Salad

 

  • 1 clove garlic, halved
  • 1 egg
  • ¼ tsp dry mustard
  • ¼ tsp fresh ground black pepper
  • ½ tsp salt
  • ½ cup grated Parmesan cheese
  • 6 TBS olive oil
  • 4 TBS lemon juice
  • ¼ tsp garlic salt
  • ½ tsp Worcestershire sauce
  • 2-3 heads Romaine lettuce, torn and chilled
  • 2 cups croutons
  1. Rub wooden salad bowl generously with garlic
  2. Break egg into bowl and stir briskly with fork until egg is no longer stringy
  3. Add mustard, pepper, salt, ¼ cup parmesan, and oil and mix well
  4. Stir in lemon juice; sprinkle with garlic salt and Worcestershire;
  5. Add lettuce and toss
  6. Sprinkle with 1 cup of croutons and 1/8 cup of parmesan and toss again. Repeat

Serves 6-8
