A good version of the classic original Caesar Salad

- 1 clove garlic, halved
- 1 egg
- ¼ tsp dry mustard
- ¼ tsp fresh ground black pepper
- ½ tsp salt
- ½ cup grated Parmesan cheese
- 6 TBS olive oil
- 4 TBS lemon juice
- ¼ tsp garlic salt
- ½ tsp Worcestershire sauce
- 2-3 heads Romaine lettuce, torn and chilled
- 2 cups croutons
- Rub wooden salad bowl generously with garlic
- Break egg into bowl and stir briskly with fork until egg is no longer stringy
- Add mustard, pepper, salt, ¼ cup parmesan, and oil and mix well
- Stir in lemon juice; sprinkle with garlic salt and Worcestershire;
- Add lettuce and toss
- Sprinkle with 1 cup of croutons and 1/8 cup of parmesan and toss again. Repeat
