  • 4 cups fresh broccoli flowerets
  • 1 small purple onion, thinly sliced and separated into rings
  • ½ cup raisins
  • ½ cup pecan pieces, toasted
  • ¾ cup mayonnaise
  • ¼ cup sugar
  • 1 ½ TBS white vinegar
  • 1 11-ounce can mandarin orange sections, drained
  1. Place broccoli into a stock pot of boiling water and allow to boil for 2 minutes; remove immediately and place into a large bowl of ice and water; this stops cooking process and preserves nice green color
  2. Combine drained and dried broccoli and next3 ingredients in a bowl and set aside
  3. Combine mayonnaise, sugar, and vinegar; add to broccoli, stirring to coat
  4. Gently stir in the mandarin sections
  5. Cover and refrigerate at least 3 hours

Serves 6
