  • 2 bags Spring Mix lettuce
  • 1/2 cup chopped green onions
  • ¾ cup celery, finely chopped
  • 1 can sliced water chestnuts
  • 1 package tiny frozen green peas
  • ½ tsp salt
  • ½ tsp black pepper
  • 2 cups mayonnaise
  • 2 TBS sugar
  • 1 TBS lemon juice
  • ½ tsp fresh dill, chopped
  • 1/4 tsp tarragon
  • ½ tsp fresh chives, chopped
  • ¾ cup parmesan cheese
  1. Tear lettuce (don’t chop) into bite sized pieces into 3 qt deep dish salad bowl
  2. Add green onions, celery, water chestnuts, and peas; salt & pepper tossing gently
  3. In separate bowl combine mayonnaise plus next 5 ingredients
  4. Spread (like icing) mayonnaise mixture over top of salad; OK for salad ingredients to show through
  5. Sprinkle parmesan cheese over top
  6. Seal tightly with plastic wrap and refrigerate at least 12 hours
  7. Toss lightly before serving
