  • Peanut oil for frying
  • 2 3-lb fryers, cut up
  • Salt to taste
  • Pepper to taste
  • 1 egg, lightly beaten
  • 1 cup Half & Half
  • 1 cup water
  • 1 cup flour
  • Finely chopped parsley
  • Finely chopped garlic
  1. In large, heavy frying pan, preheat oil to 350°
  2. Wash chicken in cold water, pat dry, and sprinkle with salt and pepper
  3. Combine egg, Half & Half, and water in a bowl
  4. Dip chicken pieces into batter, then dredge in flour
  5. Add chicken pieces to hot oil, meatiest parts first (do not crowd)
  6. Turn chicken to brown on all sides
  7. Cook until meat is tender and skin is crisp and golden brown
  8. Remove from pan, drain, and place on platter
  9. Garnish with chopped parsley and garlic

Serves 6
