  • 12 wild ducks cleaned and thawed
  • Salt and pepper
  • 4 apples
  • 4 medium onions
  • 4 oranges
  • 1 bunch green onions, chopped
  • 12 strips bacon
  1. Rub generous amount of salt and pepper on each duck
  2. Stuff cavities with ¼ of an apple, onion, and orange
  3. Place 1” water into bottom of deep covered baking dish
  4. Place ducks into dish bottom; breast side up
  5. Sprinkle with green onions
  6. Place remaining apple, onion, and orange (each cut into fourths) around ducks
  7. Lay a strip of bacon on each breast
  8. Place into 350° oven for 1 hour until browned; baste frequently
  9. Reduce temperature to 325°, cover ducks and bake additional 2-2 ½ hours

Serves 6
