  • 1 10-12 pound turkey with giblets
  • 1 pound bulk pork sausage
  • ¼ cup butter
  • ½ cup chopped onions
  • ½ cup chopped celery
  • ½ cup chopped red bell pepper
  • ½ cup chopped yellow bell pepper
  • 2 TBS minced garlic
  • ¼ cup sliced green onions
  • 2 apples, cubed
  • 1 cup chopped pecans
  • 6 slices bread, crumbled
  • 1 TBA chopped thyme
  • 2 TBS chopped sage
  • ½ tsp salt
  • ½ tsp black pepper
  • Louisiana Hot Sauce
  • tsp garlic powder
  • tsp paprika
  • 4 apples, quartered
  • 3 celery stalks, quartered
  • 3 carrots, quartered
  • 2 onions, quartered
  1. Wash bird thoroughly, drain and reserve giblets; set aside
  2. In heavy Dutch oven, melt butter over medium high heat; add onions and next 5 ingredients; sauté 3-5 minutes until wilted
  3. Add sausage, chop into the vegetable mixture and cook until golden brown, about 20 minutes; drain excess fat
  4. Add cubed apples and pecans, season with salt, pepper, and hot sauce; remove from heat
  5. Add bread and blend into stuffing mixture; add thyme and sage, stir well and allow to cool slightly
  6. Stuff bird and truss close the cavity; season with salt, pepper, hot sauce, garlic powder and paprika
  7. Place turkey into roasting pan and surround with remaining ingredients; cover tightly with foil and bake 2 ½ hours at 375°; remove foil and brown for 30 minutes
  8. Allow to sit 30 minutes before carving; any additional stuffing may be served as an accompaniment
