  • 6 whole cleaned quail
  • ½ tsp salt
  • ½ tsp black pepper
  • 2 TBS vegetable oil
  • 2 TBS butter
  • ¾ cup finely chopped onion
  • 1 large jar of slice mushrooms, reserve juice
  • 1 can cream of mushroom soup
  • ¾ cup Half and Half
  • ½ cup sliced black olives
  1. Salt and pepper quail, place in skillet with heated oil and butter over medium heat, brown slowly, turning often; about 20 minutes
  2. Place browned quail into baking dish, cover and bake 30 minutes at 350°
  3. Using original skillet, sauté onions until well wilted;
  4. Add mushrooms and juice, soup, Half and Half and black olives, mix well until creamy
  5. Spoon entire mixture over baked quail; cover and return to oven for additional 30 minutes
