Excellent! There must be an Italian neighborhood somewhere in Cajun Country!

  • 3 TBS olive oil
  • 8 chicken thighs
  • 1 medium onion, sliced into rings
  • 2 large cloves garlic, minced
  • 1 can Italian style diced tomatoes
  • Optional: 1 small can anchovies, drained and chopped
  • ½ cup whole pitted black olives, drained
  • ¼ cup capers
  • 1 TBS Italian herbs
  • ½ TBS balsamic vinegar
  • 1/8 tsp red pepper flakes
  1. In a deep skillet, brown chicken in oil for about 20 minutes, remove and set aside
  2. In same skillet, sauté onion and garlic until onion is wilted
  3. Slowly add remaining ingredients and return chicken to skillet
  4. Cover and simmer 45 minutes (stirring occasionally) until chicken is tender

Serves 4

Goes well with rainbow rotini pasta Alfredo and zucchini
