Delicious served over yellow rice and your favorite vegetable

  • 1 whole chicken washed & seasoned inside & out with Tony Cachere’s seasoning
  • 1 white onions
  • 4 stalks celery
  • 1 stick butter
  • ½ cup chopped bell pepper
  • 8 oz. fresh sliced mushrooms
  • 1 small jar pimentos
  • ½ cup flour
  • 8 oz half & half
  • 8 oz milk
  • ¼ cup chopped green onions
  • 1 tsp thyme
  • 1 tsp basil
  • ½ tsp garlic salt
  • ½ tsp black pepper
  • ½ tsp red pepper
  1. Fill chicken cavity with 1 onion halved and 2 stalks celery
  2. Place in greased casserole and bake at 325° for 45-55 minutes until done
  3. Remove chicken from casserole, cool, and debone; reserve drippings
  4. In large pot melt ½ stick butter; sauté 1 onion, bell pepper, and 2 stalks celery all chopped
  5. After 15 minutes, add chicken drippings, chicken, mushrooms, and pimentos
  6. Prepare white sauce in large separate sauce pan by combining flour & ½ stick butter; cook 7 minutes stirring continuously
  7. Slowly add Half ‘n Half and milk; continue to stir
  8. When white sauce has thickened, add chicken mixture then last 6 ingredients
  9. Ready to serve in 10 minutes
