  • 12-14 lb. turkey, washed well with giblet packet removed

Turkey Seasoning:

  • Salt, pepper, poultry seasoning, rosemary, garlic powder
  • 1 apple, quartered
  • 1 orange, quartered
  • 1 onion, quartered

Basting Sauce:

  • 1 can chicken stock
  • ½ can jellied cranberry sauce
  • 1 cup orange juice
  • 10 slices canned or jar jalapeño peppers
  1. Season turkey well inside and out (see seasoning mix)
  2. Stuff turkey with apple, orange, and onion
  3. Combine basting sauce ingredients into bowl
  4. Baste turkey, cover tightly with foil and bake turkey at 450° for about 45 minutes. Remove foil and reduce heat to 375° cooking approximately 1 ½ additional hours, basing every 20 minutes. Recommend use of thermometer inserted into thigh; temperature should register near 175°. You do not want to overcook.
  5. Remove turkey from pan and allow to cool approximately 20-30 minutes before carving
  6. Prepare gravy from drippings by placing roaster on medium heat and adding packet of turkey gravy mix with chicken stock
