Sausage Jambalaya

Ingredients:

  • 1/3 cup vegetable oil
  • 2 large onions, finely chopped
  • 2 bell peppers, finely chopped
  • 2 pounds green onion sausage (if you can find it) or your favorite pork sausage
  • 3 cups raw extra long-grain rice, cooked according to directions

Instructions:

  1. Saute’ onions and bell pepper in vegetable oil until wilted
  2. In a heavy duty separate pot, cook sausage until fat is rendered, 10-12 minutes
  3. Add ground beef to sausage and cook until pink color has disappeared
  4. Add meat mixture to vegetables
  5. Add cooked rice, mixing thoroughly
  6. Season to taste and allow to stand without heat for about 3 hours to allow flavors to combine

Serves 10-12
