This is a very hearty meal; especially on a cold Louisiana winter's day.

  • 2 TBS flour
  • 1 TBS vegetable oil
  • 1/2 lb ground beef
  • 1 1/2 lbs ground pork
  • 2 large onions, finely chopped
  • 6 green onions, chopped
  • 3 TBS parsley, finely chopped
  • 2 packs of prepared pie dough
  1. Into a large, heavy skillet prepare medium brown roux by whisking flour and oil continuously
  2. Add beef, and next 4 ingredients, cooking for 10-12 minutes
  3. Roll pie dough into thin sheets, cutting into approximately 4\‚ÄĚ-5\‚ÄĚ diameter circles
  4. Place approximately 1/2 cup of meat mixture into center of each circle; fold over and seal with dampened finger
  5. Using a fork, press along folded edge for decorative finish
  6. Place pies into a 375¬į degree oven until golden brown; about 20 minutes; flip after first side is browned during baking

Yields 12 pies

Pies may be frozen before baking
