  • Salt
  • Coarse black pepper
  • 4-5 cloves garlic, pressed
  • 1 TBS Worcestershire Sauce
  1. Remove some fat from outside roast
  2. Rub salt and pepper generously over entire roast
  3. Rub garlic over roast
  4. Sprinkle with Worcestershire Sauce
  5. Place roast in double-wrap of heavy duty aluminum foil, insert a meat thermometer into center of roast
  6. Cook 10 minutes at 500°, reduce temperature to 300° and bake until meat thermometer registers 120°
  7. Remove from oven and allow to rest before slicing; temperature should continue to rise about 10° to 12° which will result in a rare center and medium rare outer portion
  8. Serve with au jus gravy, garlic mashed potatoes, and fresh-steamed or grilled vegetables
