  • 12 loin lamb chops, about ½” – ¾” thick seasoned with lemon-pepper mix

Marinade:

  • ¼ cup olive oil
  • 2 large pods garlic, coarsely chopped
  • 1 TBS creole (or spicy brown) mustard
  • 1/8 cup honey
  • 1 TBS soy sauce
  • 1 TBS white Worcestershire sauce
  • ¼ cup Marsala wine
  • 1/8 tsp ground ginger
  • ¼ tsp rosemary (sprig of fresh even better)
  • 1 TBS lime juice
  1. In a mixing bowl prepare marinade by combining ingredients above
  2. Marinate chops in Ziplock plastic bag at least 4 hours; overnight is fine
  3. Place chops on gas or charcoal grill at medium heat until medium doneness (about 20 minutes)

Serves 6

Best served with broccoli-cheese or yellow rice and grilled vegetables including zucchini and squash
