Cuban Pork Loin

Delicious duplication of authentic Cuban Pork!

Ingredients:

  • 3# pork loinJennifer C
  • 2 TBS olive oil
  • 2 TBS butter
  • 2 onions, sliced into thin ½ rings
  • 3 toes garlic, thinly sliced
  • 4 thin slices, fresh ginger

Seasoning Mix:

  • ½ tsp ground cloves
  • ½ tsp cumin
  • ½ tsp fresh ground black pepper
  • ¼ cup honey
  • ¼ cup + 1 TBS packed dark brown sugar
  • 1 cup chicken broth
  • ¼ cup apple cider vinegar
  • ¼ cup Meyers dark rum

Instructions:

  1. In skillet, brown onion in olive oil and butter; about 15 minutes; place in roasting pan
  2. Cut slits in loin roast and stuff with garlic and ginger slices
  3. Sprinkle loin with seasoning mix, cloves, cumin, black pepper; press seasoning onto roast
  4. Place roast on top of onion mix and drizzle with honey, sprinkle with brown sugar
  5. In separate bowl, combine broth, vinegar, and rum and pour around loin
  6. Roast in oven for 1 hour (20 minutes per pound), basting frequently with juices in pan

Serves 4-6

NOTE:  Serve with Goya Black Beans (recipe on can) and long grain or yellow rice substituting chicken stock for water
