Nice Cajun twist to an ordinary meatloaf!

Ingredients:
- 3 TBS olive oil
- 1 cup finely chopped onions
- ½ cup finely chopped bell pepper

- 1 TBS minced garlic
- 1 pound ground beef
- ½ pound ground pork
- 2 eggs
- ½ cup heavy cream
- ¼ cup ketchup
- 2 tsp Worcestershire sauce
- ¾ cup bread crumbs
- 1 tsp salt
- ½ tsp black pepper
- ¼ tsp paprika
- ½ tsp salt
- ½ tsp garlic powder
- ½ tsp black pepper
- ¼ tsp cayenne pepper
- ½ tsp onion powder
- ½ tsp oregano
- ½ tsp thyme
- ¾ cup chili sauce
- 12 ounces bacon, cooked until crispy, drained & chopped
- 4 eggs, soft boiled, peeled
- 1 ½ cups grated cheddar cheese
Instructions:
- In sauté pan, heat oil then add onions, bell pepper, and garlic; sauté until onions are clear; remove from heat and set aside
- In a large mixing bowl combine all ingredients except bacon, soft boiled eggs, and cheddar cheese; mix thoroughly, but don’t over mix; divide mixture into 2 equal parts
- In a 9” x 6” loaf pan, mold half mixture into bottom and up the sides of pan
- Sprinkle bacon on top and press into meat
- Lay the soft boiled eggs in straight line down center of pan and crumble cheese evenly over the eggs
- Remaining meat mixture is then packed gently around eggs then over top of eggs and cheese, creating a dome
- Pour chili sauce over top of load and spread over entire surface
- Bake for 1 hour at 350° , then remove and allow to rest for 10 minutes before serving
- Use serrated electric knife to carve and very gently remove pieces using 2 spatulas
- Serve with more chili sauce available, if desired
