Spinach Lasagna

Great hearty company dish.  Serve with a bottle of your favorite red wine.

Ingredients:

  • 9 lasagna noodles
  • 2 packages frozen chopped spinach, cooked, drained
  • 1 8-ounce package cream cheese or Ricotta cheese
  • 4 ounces sour cream
  • ½ cup parmesan cheese, grated
  • ½ tsp salt
  • 3 pods garlic, pressed
  • 2 TBS olive oil
  • 1 pound ground chuck
  • 1 pound ground pork
  • ½ onion, chopped
  • 2 stalks celery, chopped
  • ½ bell pepper, chopped
  • 2 small cans tomato paste
  • 1 can Italian style stewed tomatoes
  • 1 tsp Italian seasoning
  • 3 pods garlic, pressed
  • ½ tsp salt
  • ½ tsp black pepper
  • ½ tsp Worcestershire sauce
  • 1 tsp sugar
  • 1 small can sliced mushrooms, drained
  • 1 small can sliced black olives, drained
  • 1 ½ cups mozzarella cheese, shredded
  • 1 cup of pepperoni slices

Directions:

  1. Boil noodles in salted water and tsp olive oil until just al dente’ (don’t overcook); remove from water and set aside to drain
  2. For filling combine in separate bowl spinach and next 5 ingredients; set aside
  3. For meat sauce, brown beef and pork in 1 TBS olive oil in a sauce pan for about 12-14 minutes
  4. Add onions, celery and bell pepper and sauté until vegetables are wilted
  5. Add tomato paste and cook for about 10 minutes, stirring occasionally
  6. Add tomatoes and cook for additional 5 minutes
  7. Add seasonings, mushrooms, and olives
  8. In a large deep casserole layer 3 TBS of meat sauce to coat bottom, followed by a layer of 3 of the noodles
  9. Next add approximately 2 cups of meat sauce
  10. Layer ½ cup of the mozzarella cheese, followed by 2nd layer of 3 noodles
  11. Place 2 cups of the spinach mixture over the noodles followed by a layer of the pepperoni slices
  12. Next layer another cup of the mozzarella cheese topped with the final 3 noodles, the rest of the meat sauce and a layer of the final cup of mozzarella cheese
  13. Bake casserole at 325° for 45 minutes; you might place a large cookie sheet under the casserole in the event of overflow

Serves 6-8

Note: You may substitute the lasagna noodles that now do not require boiling
