Great appetizer for your Cinco de Maya Party!!


  • 9 tortillas
  • 1 TBS oil
  • 3 8-ounce packages cream cheese, softened
  • 1 can chopped Rotel tomatoes, drained
  • 4 green onions finely chopped
  • 1 tsp fajita, Mexican, or Southwest seasoning
  • 1 cup slice black olives
  • 1 cup finely grated cheddar cheese


  1. Thoroughly mix cream cheese, tomatoes, green onions and seasoning in bowl
  2. Heat individual tortillas in hot oil until softened
  3. Assemble appetizer by placing tortilla down and spreading mixture over top, followed by a 2nd tortilla and then again spreading mixture, and lastly a 3rd topped with the mixture
  4. On the 3rd layer place a even sprinkling of the olive slices and cheddar cheese
  5. Using a serrated electric knife, cut the tortilla stack in fourths; but leaving them in place
  6. Each guest may then select a pie-shaped tortilla stack

Serves about 16
