Papa’s favorite morning casserole.  Really tasty casserole to serve overnight guests.

Ingredients:

  • 5 flour tortillas, softened in oil, cut into quarters
  • 1 bag hash brown frozen potatoes
  • 2 TBS vegetable oil
  • ¼ white onion, finely chopped
  • 2 green onions, thinly sliced
  • ¼ cup diced tomatoes and green chilies
  • 8 ounces sour cream
  • 1 pound Owens Sausage, browned and drained
  • 12 eggs
  • 1 cup Half & Half
  • ¼ red bell pepper, diced
  • ¼ yellow bell pepper, diced
  • ½ green bell pepper, diced

Directions:

  1. Line casserole with softened tortillas
  2. Into a large skillet brown potatoes in vegetable oil with onion, green onions, and tomatoes; turn off heat and add sour cream, mixing well
  3. Pour potato mixture over tortillas
  4. Pour browned sausage over potatoes, spreading evenly
  5. Into a mixing bowl eggs with electric mixer; gradually add Half & Half while beating; pour into casserole
  6. Sprinkle bell peppers over top and bake for 45 minutes at 350°

Serves 4
