Tasty Layered Tacos

Delicious Taco recipe; sure to please on Cinco de Mayo or any other day!

Ingredients:

  • 2 TBS vegetable oil
  • 1 # ground beef

  • 1 pkg Taco Seasoning Mix
  • 1/4 red bell pepper-chopped
  • 1/4 onion-chopped
  • 1 pkg Knorr Mexican Rice
  • 1 can pinto beans-drained
  • 6 6" soft flour (or corn) tacos
  • 1/2 cup cheddar-Monterrey Jack cheeses
  • 1/4 cup pickled jalapeno pepper slices
  • guacamole
  • salsa
  • sour cream
  • green onions

Instructions:

  1. Brown ground beef in vegetable oil in large frying pan
  2. Remove and drain except for 1 TBS oil
  3. Add bell pepper and onion and simmer until softened
  4. Add Taco Seasoning Mix and combine thoroughly with meat and vegetables
  5. Add pinto beans, drained into meat-vegetable mixture
  6. Into separate pot cook Mexican rice according to package directions
  7. Into a greased 9" baking dish place a layer of 1 tacos
  8. Next add a layer of 1/3 the beans and meat
  9. Add 1/3 of the cheeses and desired amount of jalapeno slices
  10. Repeat layers two additional times topping entire mixture with cheese and jalapeno slices
  11. Bake at 350° for 20 minutes
  12. Serve with garnishes of guacamole, fresh salsa, sour cream, and green onions

Serves 4

Note:  You may choose to substitute chicken or shrimp for the ground beef
