Spaghetti Carbonara

A little different twist on the typical pasta dish!

Ingredients:

  • 2 TBS olive oil
  • ¾ pound raw bacon, chopped
  • ½ cup chopped onion
  • 12 ounces angel hair pasta, cooked al dente’ and drained
  • 3 eggs, scrambled
  • 1 ¼ cup whipping cream
  • ¼ cup freshly grated Parmesan cheese
  • ½ tsp salt
  • ½ tsp fresh ground black pepper

Instructions:

  1. Heat olive oil in skillet over medium heat; add bacon and cook about 4 minutes until it begins to brown
  2. Add onion and cook for approximate 4 minutes until it turns clear
  3. Drain oil from skillet
  4. Add eggs, cream, and ¼ cup Parmesan cheese and whisk continuously for about 4 minutes
  5. Transfer pasta to skillet and cook over low heat until mixture thickens and is heated through, gently stir; do not allow to boil
  6. Serve with additional Parmesan cheese available

Serves 4
