Italian Night!


  • 1 box lasagna noodles cooked; careful not to overcook
  • 1 tsp olive oil
  • 1 box frozen chopped spinach, cooked and drained
  • ½ cup ricotta cheese
  • ½ cup grated Parmesan cheese
  • ¼ cup sour cream
  • 2 jars of your favorite prepared tomato sauce, heated
  • 1 cup shaved Parmesan cheese
  • Basil sprigs for garnish


  1. Into a sauce pan heat olive oil and combine spinach, and next 3 ingredients, keep warm
  2. Thinly spread carefully along the length of each lasagna noodle and roll up
  3. Carefully slice each noodle roll crosswise and place each half into bottom of a pasta dish with scalloped sides up
  4. Add hot tomato sauce around base of noodle rolls and sprinkle with shaved Parmesan cheese
  5. Garnish with sprig of fresh basil

Serves 6
