Great accompaniment with your favorite chili recipe

Ingredients:

  • 1 package Martha White’s Buttermilk Cornbread Mix or Jiffy Cornbread Mix
  • 1 egg, lightly beaten
  • ½ cup milk
  • 1 small can of chopped green chilies
  • OR 6-8 slices jalapeño pepper, seeded
  • 1 cup shredded Mexican or cheddar cheese
  • 1 small can creamed corn or Mexicorn
  • 1 small can chopped green chili peppers

Instructions:

  1. Mix all ingredients into a bowl; put small amount of vegetable oil into bottom of a black iron skillet
  2. Pour ingredients into skillet and bake at 375° for 30 minutes

Serves 4
