Authentic recipe and it should closely resemble that found in your favorite local Chinese restaurant.
Ingredients:
- 4 eggs, scrambled, and fried separately
- 4 cups cooked and chilled rice
- 5 TBS peanut oil (in all)
- 1 pound or 1 cup cooked chopped or ground pork
- ½ pound or 1 cup of cooked, peeled, and chopped shrimp
- 3 finely chopped green onions
- 3 pods garlic, pressed
- 1 small onion, finely chopped
- 4 tsp soy sauce
- 3 TBS oyster sauce
- 3 TBS MSG (optional)
- 2 tsp sugar
Directions:
- Scramble & fry eggs fires, cut into strips and set aside
- Heat 2 TBS peanut oil in wok and fry onions on high heat for about 2 minutes
- Add pork and fry, constantly turning until red color has disappeared and meat begins to brown; remove and set aside
- Add shrimp plus 4 tsp of soy sauce and continue stirring about 3 minutes; remove and set aside
- Add remaining 3 TBS peanut oil to wok and add green onions and garlic; cook 30 seconds;
- Add rice and mix until rice turns warm; about 4-5 minutes
- Add oyster sauce MSG, and sugar;
- Add pork, shrimp and fold in fried egg strips cooking an additional 3-4 minutes
- Garnish with thin green onion strips
