Be sure to include fresh cilantro, lemon juice, and scallions with this dish for the true flavor.

Ingredients:

  • 2 very ripe avocados, peeled and diced
  • 1 ½ TBS fresh lemon juice
  • 1 clove garlic, minced or mashed
  • 1 tsp basil
  • 1 tsp finely chopped fresh cilantro
  • 1/4 cup finely chopped red bell pepper
  • 2 TBS of your favorite salsa
  • 2 TBS thinly sliced scallions
  • Dash of fajita seasoning
  • ½ tsp Louisiana hot sauce
  • Dash of freshly ground black pepper
  • 1 TBS mayonnaise
  • 3 TBS sour cream
  • 1 tsp minced white or Vidalia onion

Directions

  1. Combine avocado and remaining ingredients into a large bowl at least 1 hour before serving to allow flavors to combine; cover and refrigerate for at least 2 hours

Makes 2 1/2 cups
