Tasty fajita dish featuring marinated flank steak

Ingredients:

  • 3-4 pound flank steak pounded between 2 sheets plastic wrap to 1/4” thickness
  • ½ olive oil
  • ¼ cup red wine vinegar
  • 1/3 cup lime juice
  • 1/3 cup finely chopped onion
  • 1 tsp sugar
  • ½ tsp salt
  • ½ tsp black pepper
  • ¼ tsp cumin
  • 3 cloves minced garlic
  • 15 six inch corn tortillas
  • Picante’ sauce
  • Guacamole
  • Minced white onion
  • Finely chopped cilantro
  • Chopped tomatoes
  • Salsa verde
  • Cheddar cheese
  • Sour cream

Directions:

  1. The day prior to or 6-8 hours before serving marinate flank steak in next 9 ingredients (thoroughly mixed); refrigerate in large plastic storage bag
  2. Remove from marinade and grill over medium coals or heat for 6-7 minutes
  3. Remove from heat and slice into thin slices across grain
  4. Wrap tortillas in aluminum foil and heat in 325° oven for 15 minutes
  5. Arrange service area with tortillas, steak, and last 8 ingredients in individual containers for each guest to prepare to their own individual preferences
