Delicious Italian Casserole!

  • 1 box cannelloni cooked according to pack instructions
  • 2 TBS olive oil
  • ½ pound Italian sausage
  • ½ pound ground meat
  • 1/2 onion, finely chopped
  • ½ bell pepper, finely chopped
  • 1 stalk celery, finely chopped
  • 1 box frozen chopped spinach
  • 2 pods garlic, minced
  • ½ tsp black pepper
  • ½ cup shredded Parmesan cheese
  • 1 egg, beaten
  • 4 TBS butter
  • 4 TBS flour
  • 8 ounces whipping cream
  • ¼ cup feta cheese
  • Dash of salt and white pepper
  • 1 can Cajun or Italian style diced tomatoes
  • 1 jar Classico tomato sauce with basil
  • ½ tsp Italian seasoning
  • ¾ cup mozzarella cheese

Meat Mixture:

  1. Into a large sauce pan heat oil then add meats, onion, bell pepper, celery; cook for 15 minutes on medium high heat
  2. Add drained spinach and cook additional 8 minutes until spinach is fully defrosted and incorporated into meat and vegetables
  3. Add salt and next 3 ingredients thoroughly combining; remove from heat and set aside

White Sauce:

  1. In a small saucepan heat butter and whisk in the flour; cook for 5 minutes, until flour is thoroughly combined
  2. Slowly add cream, whisking constantly; then add feta cheese, salt and pepper; once all is blended well, remove from heat and set aside

Tomato Sauce:

  1. Into a small pot combine tomatoes, tomato sauce, and Italian seasoning; thoroughly mixing; cook about 8 minutes; remove from heat


  1. Spread small amount of tomato sauce into bottom of casserole or baking dish
  2. Fill cannelloni with meat mixture
  3. Lay filled cannelloni on top of sauce in bottom of casserole
  4. Top cannelloni with white sauce following by remainder of tomato sauce
  5. Sprinkle mozzarella cheese over top of casserole
  6. Bake at 350° covered for 25-30 minutes; allow to cool slightly for ease in serving
