Filling comfort food Mexican style!
Ingredients:
- 2 TBS olive oil
- 1 medium white or Vidalia onion, finely chopped
- 20 ounces (1 ¼ pounds) ground beef
- 1 ½ TBS chili powder
- ½ tsp ground cumin
- ½ tsp salt
- ¼ tsp black pepper
- 1 10-ounce package frozen chopped spinach, thawed, well drained
- 1 ¼ cups prepared chunky salsa
- 1 small can sliced black olives
- 1 TBS fresh cilantro, finely chopped
- 1 cup shredded Cheddar cheese
- 8 medium flour tortillas, warmed
Directions:
- In large skilled heat oil and add onion, cook until well wilted, about 12 minutes
- Add ground beef and continue cooking and stirring until beef is no longer pink; pour off drippings
- Season beef with chili powder, cumin, salt, and pepper; stir in spinach and salsa; heat throughout; removed from heat and stir in black olives. Cilantro, and cheese
- Spoon ½ cup beef mixture in center of each tortilla; fold bottom edge up over filling; fold sides to center, overlapping edges
- Place seam side down into greased casserole; bake at 350° for 15 minutes
- Serve with Mexican rice and black beans
Makes 8 burritos
