Perfect example of Mexican 'comfort food'!!

Ingredients:

  • 2 10-ounce bags saffron rice
  • 2 TBS vegetable oil
  • 2 cans Mexi-corn
  • 1 bag frozen small peas
  • 1 onion, finely chopped
  • 1 TBS green bell pepper, diced
  • 1 TBS yellow bell pepper, diced
  • 1 TBS red bell pepper, diced
  • 1 can broccoli-cheese soup
  • 1 8-ounce container sour cream
  • 1 TBS finely chopped fresh cilantro
  • Sprigs of fresh cilantro for garnish

Ingredients:

  1. Cook rice according to package directions; set aside
  2. In a large skillet heat oil and sauté onion and bell peppers; until onion is wilted
  3. Add, peas, soup, sour cream, and chopped cilantro mixing thoroughly;
  4. Add rice and cook on low heat for 10-12 minutes until ready to serve
  5. Garnish with cilantro sprigs

Serves 4-6
