Peach Bread Pudding with Spice Sauce

This is an absolutely wonderful version on the traditional bread pudding. Recipe is restaurant quality!

Ingredients:

  • 8-oz. loaf stale French bread
  • 5 eggs, lightly beaten
  • 1/2 cup sugar
  • 1/4 TBS nutmeg
  • 1/4 TBS cinnamon
  • 2 TBS vanilla
  • 2 drops yellow food coloring (optional)
  • dash of salt
  • 2 cups Half & Half
  • 1/2 cup canned peaches, drained and chopped
  • 6 TBS melted butter

Spice Sauce:

  • 1 stick butter
  • 1/4 cup flour
  • 2 cups milk
  • 3/4 cup sugar
  • 1/2 TBS nutmeg
  • 1/2 TBS cinnamon
  • 2 drops yellow food coloring (optional)
  • 1 1/2 TBS brandy

Directions:

  1. Preheat oven to 350°
  2. Dice French bread, and set aside
  3. Combine remaining ingredients into large mixing bowl, and blend well
  4. Fold in bread and allow to absorb flavors
  5. Place pudding into greased 9”x12” baking pan
  6. Set pan into larger pan of water; halfway up sides of pudding pan
  7. Bake uncovered for 1 hour 20 minutes or until top is lightly browned and knife inserted comes out clean

Spice Sauce:

  1. In heavy sauce pan, melt 1 stick butter over medium heat
  2. Add flour, whisking until flour is cooked about 5 -6 minutes
  3. Gradually blend in milk
  4. Add sugar, spices, and food coloring; stir until sauce thickens
  5. When thickened, blend in brandy and serve over individual bread pudding servings
