Made famous by the Brennan\’s Restaurant, New Orleans. Makes for great show for your guests!


  • 6 TBS butter
  • 1 1/2 cups brown sugar
  • 3/4 tsp cinnamon
  • 1/3 cup banana liqueur
  • 6 bananas, peeled, cut in half lengthwise, and halved crosswise
  • 1/3 cup dark rum
  • 6 scoops vanilla ice cream
  1. Melt butter over medium high temperature in a large heavy skillet
  2. Add sugar, cinnamon, banana liqueur, and stir to mix; heat for 3 minutes until sugar begins to caramalize
  3. Carefully place halved bananas into skilled and saute until soft and slightly browned
  4. Pour rum on top, but do not stir into sauce; allowing it to heat well
  5. Carefully light the mixture and swirl the skillet to prolong the flaming
  6. Place a scoop of ice cream on each dessert plate
  7. Carefully lift bananas from pan and place 4 pieces over each portion of ice cream
  8. Spoon hot sauce from pan over the top of the bananas
  9. Serve immediately
