Made famous by the Brennan\’s Restaurant, New Orleans. Makes for great show for your guests!
Ingredients:
- 6 TBS butter
- 1 1/2 cups brown sugar
- 3/4 tsp cinnamon
- 1/3 cup banana liqueur
- 6 bananas, peeled, cut in half lengthwise, and halved crosswise
- 1/3 cup dark rum
- 6 scoops vanilla ice cream
- Melt butter over medium high temperature in a large heavy skillet
- Add sugar, cinnamon, banana liqueur, and stir to mix; heat for 3 minutes until sugar begins to caramalize
- Carefully place halved bananas into skilled and saute until soft and slightly browned
- Pour rum on top, but do not stir into sauce; allowing it to heat well
- Carefully light the mixture and swirl the skillet to prolong the flaming
- Place a scoop of ice cream on each dessert plate
- Carefully lift bananas from pan and place 4 pieces over each portion of ice cream
- Spoon hot sauce from pan over the top of the bananas
- Serve immediately
