White Chocolate Cheescake

Superb!!  Try to ignore the the calories. . .

 

Ingredients:

Lorna Doone Crust:

  • 1 Lorna Doone crust
  • 1 box Lorna Doone cookies
  • 1 stick melted butter
  • ½ cup pecans

OR

Graham Cracker Crust:

  • 1 ½ cups graham cracker crumbs
  • 2 TBS sugar
  • 1 tsp cinnamon
  • 1 stock melted butter

Cheesecake:

  • 10 ounces white chocolate
  • 3 8-ounce packages cream cheese
  • ¼ cup sugar
  • 1 can condensed milk
  • 1 16-ounce carton sour cream
  • 5 whole eggs
  • 1 tsp vanilla extract
  • 1 ¼ cup large chocolate chips
  • Whipped cream (optional)

Directions:

Crust

  1. Combine either of above crusts ingredients into a mixing bowl and thoroughly incorporate
  2. Press ingredients into bottom and ½” up sides of a spring pan
  3. Place on middle oven rack at bake at 350° for 5 minutes; remove and set aside

Cheesecake:

  1. Melt white chocolate in microwave for 4 minutes at 50% power, set aside
  2. In the food processor combine half of each cream cheese, sugar, condensed milk, sour cream, 3 eggs, vanilla extract and melted white chocolate; process until smooth and combined; remove to bowl
  3. Add 1 cup of chocolate chips to this first batch, combine and pour into the pie shell
  4. Combine remaining ingredients into the 2nd processor batch and pour over the 1st batch; sprinkle top with remaining 4th cup of chocolate chips
  5. Bake at 325° for 55 minutes; turn off oven, but leave cheese in oven an additional 30 minutes; partially open door and leave another 30 minutes
  6. Cover and remove to refrigerator overnight

Serves 8-10

Optional to serve with dollop of whipped cream over each serving
