Deliciously fruity dessert.  No baking necessary.  Great summertime treat for dinner guests!




  • 2 pints fresh strawberries, washed & stemmed
  • 1 cup sugar
  • 3 TBS corn starch
  • 1 8-ounce package cream cheese, softened with 1 TBS cream
  • 8 ounces whipping cream
  • 1 9”-10” deep pie crust, cooked according to directions
  1. In food processor mash all but ¼ cup (for garnish) of the strawberries;
  2. Place strawberries into sauce pan; add sugar and cornstarch, cooking over low heat; stir constantly for 10 minutes until thick; remove from heat and cool
  3. Spread cream cheese over bottom of pie shell and top with cooled berry mixture
  4. 2 hours before serving spread whipping cream on top of cream cheese and garnish with reserved strawberries

Yields 8-9 slices
