Rice Pudding

Delicious and really "comfortable" dessert!

 

Ingredients:

  • 2 cups milk
  • 1 ¼ cups sugar
  • ¼ cup light brown sugar, packed
  • 4 large brown eggs, lightly beaten
  • 1 medium apple, finely diced
  • ½ cup raisins
  • ½ cup crushed pineapple
  • ½ tsp ginger
  • 1 tsp nutmeg
  • ½ tsp cinnamon
  • 1 cup cooked white rice
  • 2 cups freshly whipped heavy cream with 2 TBS sugar added
    Directions:
  1. Pour milk into heavy saucepan over medium heat and bring to a boil; reduce heat to low and allow milk to simmer until scalded
  2. Mix sugar, brown sugar, and eggs until well creamed into a large mixing bowl
  3. Pour scalded milk on top of sugar mixture and blend together
  4. Add apple, raisins, pineapple, spices, and rice, and thoroughly blend
  5. Pour pudding into shallow 2 ½ quart baking dish and place dish into 1” of water in a larger baking pan
  6. Bake at 325° for 1 hour; remove carefully and allow to cool for 15-20 minutes before serving
  7. Serve with a half cup of fresh whipped cream on top
