Excellent fruity filling in lieu of simple icing between layers ...

Ingredients: 

  • 1 cup crushed pineapple, drained
  • ½ cup pineapple juice
  • ¾ cup sugar
  • 2 TBS cornstarch
  • 2 egg yolks
  • Juice of 1 lemon
  • ½ tsp salt
    Directions:
  1. Combine above into a double-boiler whisking until thickened, about 10 minutes
  2. Allow to cool slightly before spreading

Enough filling for 1 cake

Excellent with Duncan Hines Butter Golden Cake Mix plus lemon extract
Recommend cream cheese icing
