A must at any fall or winter gathering; especially holiday times!
Ingredients:
- 1 8-ounce package cream cheese
- ¼ cup sugar
- ½ tsp vanilla extract
- 1 lightly beaten egg
- 1 can pumpkin (not pumpkin pie filling)
- 1 cup Pet milk
- 2 eggs
- ¼ cup brown sugar
- ¼ cup sugar
- ¼ tsp cinnamon
- ¼ tsp salt
- ¼ tsp nutmeg
- 1 unbaked pie shell
Topping:
- 1 cup chopped pecans
- 2 TBS butter, softened
- 2 TBS flour
- 2 TBS brown sugar
- Into a mixing bowl, beat cream cheese and next 3 ingredients; chill for 30 minutes
- Into a separate bowl, mix pumpkin and next 7 ingredients
- Pour chilled cream cheese mixture into unbaked pie shell
- Pour pumpkin mixture carefully over cream cheese mixture
- Cover edge of pie shell with aluminum foil
- Bake in preheated 350° oven for 25 minutes; remove foil and bake additional 25 minutes
Topping:
- Combine topping ingredients well and place over top of pie
- Bake about 10-15 minutes at 350°
Serves 6-8
