Paradise Pumpkin Pie

A must at any fall or winter gathering; especially holiday times!

Ingredients:

  • 1 8-ounce package cream cheese
  • ¼ cup sugar
  • ½ tsp vanilla extract
  • 1 lightly beaten egg
  • 1 can pumpkin (not pumpkin pie filling)
  • 1 cup Pet milk
  • 2 eggs
  • ¼ cup brown sugar
  • ¼ cup sugar
  • ¼ tsp cinnamon
  • ¼ tsp salt
  • ¼ tsp nutmeg
  • 1 unbaked pie shell

Topping:

  • 1 cup chopped pecans
  • 2 TBS butter, softened
  • 2 TBS flour
  • 2 TBS brown sugar
    Directions:
  1. Into a mixing bowl, beat cream cheese and next 3 ingredients; chill for 30 minutes
  2. Into a separate bowl, mix pumpkin and next 7 ingredients
  3. Pour chilled cream cheese mixture into unbaked pie shell
  4. Pour pumpkin mixture carefully over cream cheese mixture
  5. Cover edge of pie shell with aluminum foil
  6. Bake in preheated 350° oven for 25 minutes; remove foil and bake additional 25 minutes

Topping:

  1. Combine topping ingredients well and place over top of pie
  2. Bake about 10-15 minutes at 350°

Serves 6-8
