Tired of seeing all the rich, filling desserts?  This light cake recipe is a perfect compliment  to a hot cup of tea or coffee; or even a cold glass of milk!  Yum!

Ingredients:

  • 1 package Duncan Hines Lemon Supreme cake mix
  • 1 package of Jello instant lemon pudding
  • 4 eggs
  • 1 cup apricot nectar
  • ½ cup Crisco oil
  • 1 cup powdered sugar
  • Juice of 1 lemon
    Directions:
  1. Into a mixing bowl combine cake mix and next 4 ingredients; blend at medium speed until totaling incorporated
  2. Pour cake mix into greased and floured 9” x 12” baking pan
  3. Bake at 350° for 1 hour and 15 minutes
  4. In separate bowl mix powered sugar and lemon juice thoroughly; pour over cake while still warm

Serves 6-8
