Light and tangy, refreshing to the palate following a full meal

Ingredients:

  • 2 cups finely crushed vanilla wafers or graham crackers
  • ½ cup finely chopped, toasted and buttered almonds
  • 1/3 cup melted butter
  • 1 can sweetened condensed milk
  • 2 egg yolks
  • 1 tsp grated lemon peel
  • ½ cup freshly squeezed lemon juice
  • ½ pint whipping cream, whipped until frothy
  • Toasted almonds

  • Directions:
  1. Into a bowl combine cookie crumbs, almonds and butter; mix thoroughly
  2. Press into a 9” or 10” pie pan
  3. Bake at 300° until brown, about 20 minutes; remove and allow to cool
  4. Into a bowl combine condensed milk and next 3 ingredients; mix well
  5. Pour mixture into baked pie crust, topped generously with whipped cream and sprinkling of chopped almonds

Serves 6-8
