Old recipe dating back to the early 20th Century. . .
Ingredients:
- 2 cups raw oatmeal (rolled oats)
- 1 TBS flour
- ½ tsp salt
- 2 cups sugar
- 2 sticks butter, melted
- 2 eggs, well beaten
- 1 tsp vanilla extract
Directions:
- Into a bowl, combine oatmeal, flour, salt, and sugar
- Pour very hot butter over mixture and stir until sugar is melted
- Add eggs and vanilla, stirring well
- Spread aluminum foil over a cookie sheet
- Drop ½ TBS of dough 2” apart
- Cook at 325° for 11 minutes; allow cookies to remain on foil to cool; they won’t stick
- Once cooled, place in air tight container as they will become limp
Makes about 3 dozen cookies
