The chocolate, pecans, and caramelsĀ combine for a delicious pie.Ā  In lieu of the whipped cream topping you might substitute your favorite vanilla ice cream!


  • 2 cups chocolate wafer cookies, crumbed
  • Ā¾ cup finely chopped pecans
  • Ā½ cup melted butter
  • 1 envelope Knox gelatin
  • Ā¼ cup cold water
  • 2 cups whipping cream
  • 1 6-ounce bag semi-sweet chocolate chips
  • 2 eggs
  • 1 tsp vanilla extract
  • 1 cup of caramels
  • 2 TBS butter
  1. Combine cookie crumbs, pecans and butter and heat throughout; remove and set aside to room temperature
  2. Press into 9ā€ pie pan on bottom and up sides
  3. Bake at 350Ā° for 10 minutes remove and set aside
  4. In a small sauce pan, sprinkle gelatin over water and let stand for 1 minute;
  5. Turn heat to low and continue stirring until dissolved
  6. Stir in 1 cup of cream and bring to a boil
  7. Add chocolate chips and another Ā½ cup of the cream, the eggs, and vanilla; put aside and allow to stand 15 minutes until thickened
  8. In a sauce pan, melt caramels in Ā¼ cup cream and butter; pour into crust
  9. Whisk chocolate mixture until smooth, pour over caramel and chill
  10. Garnish with whipped cream
