The chocolate, pecans, and caramelsĀ combine for a delicious pie.Ā In lieu of the whipped cream topping you might substitute your favorite vanilla ice cream!
Ingredients:
- 2 cups chocolate wafer cookies, crumbed
- ¾ cup finely chopped pecans
- ½ cup melted butter
- 1 envelope Knox gelatin
- ¼ cup cold water
- 2 cups whipping cream
- 1 6-ounce bag semi-sweet chocolate chips
- 2 eggs
- 1 tsp vanilla extract
- 1 cup of caramels
- 2 TBS butter
- Combine cookie crumbs, pecans and butter and heat throughout; remove and set aside to room temperature
- Press into 9ā pie pan on bottom and up sides
- Bake at 350° for 10 minutes remove and set aside
- In a small sauce pan, sprinkle gelatin over water and let stand for 1 minute;
- Turn heat to low and continue stirring until dissolved
- Stir in 1 cup of cream and bring to a boil
- Add chocolate chips and another ½ cup of the cream, the eggs, and vanilla; put aside and allow to stand 15 minutes until thickened
- In a sauce pan, melt caramels in ¼ cup cream and butter; pour into crust
- Whisk chocolate mixture until smooth, pour over caramel and chill
- Garnish with whipped cream
