A “show-off” dessert; sure to impress your guests!  Worth the effort.

 

Ingredients:

  • ½ cup pre-sifted flour
  • 1 tsp sugar
  • ½ tsp salt
  • 1 cup milk
  • 4 eggs
  • 3 TBS butter, melted & slightly cooled
  • ½ cup butter
  • ½ cup sugar
  • 1 tsp grated orange peel
  • ½ cup fresh orange juice
  • ¼ cup Triple Sec or Cointreau
  • ¼ cup brandy
    Directions:

Crepe Batter:

  1. Into a blender combine pre-sifted flour and next 4 ingredients, blending for about 10 seconds, adding butter as mixture is blending
  2. Pour about ½ cup of batter into a heated, greased crepe pan over medium high heat and brown on one side; each crepe will take just 30-40 seconds so you must be attentive

Sauce #1:

  1. In a sauté pan combine ½ cup butter and next 3 ingredients, heat over medium high temperature until mixture comes to a boil; reduce heat and stir occasionally until ready to serve

Sauce #2:

  1. Combine liqueurs in microwavable measuring cup and heat briefly until warm

Assembly:

  1. Arrange crepes in bottom of serving pan
  2. Pour Sauce #1 over crepes, take to table and ignite Sauce # 2 pour over crepes

Serves 4-6
