Nice for a mid-afternoon treat with coffee, tea, or ice cream!

Ingredients:
- 30 Lorna Doone cookies, crumbled, not too fine
- 1 stick butter, melted
- 1 large package cream cheese
- 5 heaping TBS sugar
- 1 egg
- Juice of half lemon
- 1 tsp vanilla extract
- 1 pt sour cream
- 3 TBS sugar
- Juice of half lemon
- 1 tsp vanilla extract
- In a mixing bowl blend cookies and melted butter until combined
- Place into bottom of a deep pie pan, press firmly, crust will be thick
- Into a mixing bowl blend cream cheese and next 4 ingredients, whip until smooth; pour over crumbs in pie pan
- Bake at 350° for 15 minutes; remove from oven
- In a mixing bowl combine sour cream and next 3 ingredients, beat until well blended; pour topping over filling
- Return pie to oven for 15-20 minutes; remove and allow to cool
- Place in refrigerator at least 3 hours before serving
